Functions, variables and procedures, for ODI, were transferred in these same objects, that the ODI makes it possible to create and, in the assembly of the Steps / scenario, the call was created in the order that is in the Oracle Package?

I think you do not have to move any of it.
You can run in ODI a Procurse, Function, Oracle Package. (When you create a package in ODI, and it's putting each step). Where you drag the interfaces, and put the order of execution of each ...
So, I think you just call what you need from there.
The use of variables is more for counters, or to save names that will be used during execution in ODI.
So, that's why you understood.
Maybe I treat this way (call PCK in ODI) but, we are still analysis, because in the middle of this package would enter ODI interfaces etc.
I think it has no problem, just break the package in the middle.
Example:
1. Odi calls first stored procedure step.
2. ODI calls ODI interface
3. ODI calls second stored procedure step.
